Ingredients

  • 1 tbsp neutral oil can use vegetable/canola or something like avocado oil
  • 1 pound ground Italian sausage
  • ½ cup onion white, yellow, green, whatever your heart desires
  • 1 tsp garlic can use fresh garlic, dehydrated garlic, or garlic powder.
  • 28 oz crushed tomatoes
  • 32 oz chicken or vegetable broth
  • 2 tbsp fresh basil, chopped
  • salt & pepper to taste
  • 9 oz tortellini refrigerated recommended, but frozen is fine, may need to adjust cooking time
  • 2 cups fresh spinach, packed

Method

  1. Heat large, heavy bottomed pan over medium-high heat. Heat vegetable oil, add onion, salt & pepper to taste. Sauté until onions start to soften; approx 3-4 minutes.
  2. Add Italian sausage & garlic to pan, cooking until sausage is no longer pink; approx 4-5 minutes. Drain excess grease.
  3. Stir in crushed tomatoes, broth, basil, salt & pepper. Bring to a gentle boil, cover & reduce heat to low. Simmer 20 minutes.
  4. Ideally, keep covered and let cook on a low simmer. If you are concerned with burning, ok to take lid off to stir.
  5. Add tortellini & spinach. On a medium simmer, cook 5-10 minutes or until pasta is tender.
  6. Serve up and top with parmesan, if desired.
  7. Can add ½ cup Greek yogurt or sour cream to make the base a creamy soup
